Pecan Orange Shortbread Cookies


1 C. unsalted softened Butter

1 C. Icing Sugar 

1 C. Organic Flour

1/4 C. Rice Flour

1/4 tsp. Allspice

1/8 tsp. salt 

2 drops Orange essential oil

1/4 C. Rolled Pecans

1/4 C. Chocolate chips + 3 tbsp. butter


In a mixing bowl mix sugar and butter. Add flours, spice, salt and oil. Mix until combined. Place on a parchment paper and roll into a log. Chill 1 hour or longer. Preheat oven to 325. Once chilled roll log in pecans. Using a sharp knife, cut log into 1/2 inch slices. Place on parchment and bake 10-12 minutes. 

Cool. Once cooled melt butter and chocolate together. Dip cookies in chocolate.
